Winter Warmer

Whenever I fancy trying out new healthy recipes I turn to Pinterest. Although, I also turn to Pinterest for (1) fitness routines, (2) hair-do ideas, (3) outfit inspiration, (4) to induce my feelings of wanderlust which is often followed by that empty-pit-in-the-stomach feeling when I look out my window (knowing I probably won’t do anything about that anyway.. why do I do it to myself!!), (5) party themes, although I’ve only ever used them once, (6) baking inspiration, without every  really baking, (7) for craft and DIY fashion, (8) to pin basically everything there is to pin…..

Foodwise though, it has been a major inspiration and some of the recipes have become a staple in my diet. My latest fav is this beautiful healthy winter soup.

Lean mince, garlic, kale, courgette, miso paste and cannellini beans ‘equals’ nomtasticness in a bowl!

Start off by chopping the courgette and making small equal sized meatballs.

Brown it all off in a frying pan with a little coconut oil and garlic.

Add the meatballs and courgette to a large pan with as much water as you’d like. Spoon in the miso paste and bring to a simmer so the paste disolves. Add more miso to taste and then start adding the cannellini beans and chopped kale. Leave to simmer on a low heat for about 20 minutes.

And there you have it… Nomtasticness in a bowl. I tend to make a big batch and portion it off in tubs so I can have it for lunches at work or if I had to work late a need a quick dinner.

Let me know how you get on. I know this  is a slap dash recipe. But I tend to do my meals in  a slapdash way. Adding ingredients to taste, but still being mindful of keeping the unhealthy parts (i.e., salts and fats) to a minimum/moderate amount.
